homemade ice cream help?
i just got my first ice cream maker. i remember as a child my mother always made homemade ice cream and it was so good. so since my husband loves ice cream so much (he eat 1.5 gal per week) i decided to get him one for fathers day. it is a 2 quart cuisinart fully automatic.
it came with a booklet with recipes but doesnt tell you at all on how to make fat free or low fat ice cream. i dont want frozen yogurt. the recipe that it has for simple vanilla ice cream use milk, heavy cream, and sugar.
i already figure i can use less sugar than what it calls for.
but here are my questions.
can i use fat free milk for the milk portion of it?
also, when it calls for heavy cream can i use light cream instead or is there something better??
I suggest getting the Ben And Jerry’s ice cream book because they have a chapter on milk fat and ice cream and why everything is heavy cream and what you can expect when substituting it with something else.
