How can I make my own sausages?

I’m 15 and have been really trying to learn how to cook. One thing that I like to do is make food from scratch so I know what goes in it. I have been wanting to make sausages like Italian, Bratwurst, and Polish. I have found many recipes online and on Youtube but I want to know the equipment that I will need. How can I keep everything from getting contaminated?? I also read that I can get the meat already grounded up so that takes away the need for the grinder and all I would need is the sausage stuffer. One last thing what does it mean when they say you might need to add fat??
Anyone who has actually made sausages can you give me tips??

YES! Finally someone young who wants to learn the fine art of Charcuterie! (That’s the professional term used for sausage and salami makers) It can be quite fun and a lot of hard work.

I have to be honest with you though, It’s not for the faint of heart. I’m not just saying this to get the 10 points either but you really should listen to me or someone who knows what they’re doing.

You have a few options here…Raw sausage like the ones you mentioned above are pretty easy, You just need a bowl, your hands and some spices really. Now you have to keep in mind there are a lot of things you may not know such as which casings you need to use for what kind of sausage you’re making, your drying methods and a dry box.

I cannot stress enough the importance of a good book on the subject. One of the finest books I’ve read was from a colleague of mine. It’s called “Charcuterie, teh craft of salting, smoking and curing” by Michael Ruhlman and Brian Polcyn. Michael teaches butchering and charcuterie and schoolcraft culinary academy and is a master in his field. His book is ESSENTIAL if you really want to know about the very fine details. especially aging. If you do not plan on aging your salamis or sausages then that’s fine.

Now, to answer more about what you wrote, Fat is essential because it’s what builds flavor. You cannot make a lean sausage taste good you have to have fat. Some cuts of meat don’t have it. The thing is that you need to keep in mind is that making your own sausage is more expensive than just buying it at the grocery store. You control what you put into it. Therefore you can control what ingredients you’d like. I would start talking with local farms and seeing if you can’t buy one of their pigs. A good butt roast is a great cut for making sausages. It has the right amount of marbling.
