How do I make eggplant tomato sauce?
I’m not very good at cooking and I need very precise instructions. For example, the recipe I have says:
“Heat another skillet with approximately 3 tbsp (The recipe calls for 2 cups of oil but I did not feel it necessary to add so much) of olive oil. Rinse the eggplant then fry for about 8 minutes.”
The recipe also calls for heating TWELVE ounces of olive oil in a different skillet, and cook the chopped garlic in that. Is that right? That’s a lot of olive oil! More than half the bottle in fact! I’m supposed to use all that olive oil to cook three minced cloves of garlic?
Here’s the recipe:
•2 lb eggplant, diced 2 tbsp salt 3 tbsp olive oil 3 garlic cloves, chopped 1 lb ripe tomatoes, seeded and chopped 2 tbsp tomato paste 12 oz spaghetti olive oil for frying 1/4 c chopped basil.
The 12 ounces is for the spaghetti or whatever pasta you’re using. Only use enough olive oil for the frying…that’s what it actually says rather than 12 oz. olive oil. 3 Tablespoons of olive oil goes into your sauce with the garlic cloves, tomatoes (seeded and chopped), tomato paste. I’m guessing they have you sprinkling the chopped basil over the top of everything. You can put it in the sauce at the end if you’d rather.
